<P>PROBLEM TO BE SOLVED: To provide Name-miso (seasoned mixture paste of miso) smooth, excellent in taste and obtained by adding honey to capsicum and dried cuttlefish (or dried scallop). <P>SOLUTION: The Name-miso is obtained through the following process: adding 600-2,000 cc of honey, 300-800 g of dried cuttlefish, 10-40 g of pepper, and as necessary, 10-20 wt.% of alcohol based on the total weight of the mixture, to 5 kg of Miso followed by heating the mixture at 170-220°C for 7-15 min, then leaving the heated mixture as it is so as to have normal temperature. When the mixture contains the alcohol, the mixture is heated so as to make the amount correspond to ≤10 wt.%, for example. The mixture may contain ginger, soy sauce, peel of citrus fruit, sesame, perilla leaves, dried laver and/or soup stock.
