According to the present invention, provided are austenite stainless steel and a manufacturing method thereof. The austenite stainless steel comprises: an amount equal to or less than 0.08 wt% of C (excluding 0 wt%); 0.5-1.5 wt% of Si; 2.5-3.5 wt% of Mn; 18-20 wt% of Cr; 0.3-1.5 wt% of Ni; 0.2-0.4 wt% of N; 0.3-1.5 wt% of Cu; 0.01-0.1 wt% of Ti; 0.01-0.1 wt% of Nb; 0.01-0.1 wt% of V; and the remainder consisting of Fe and inevitable impurities. Moreover, plastic organic martensite accounts for 10-40% in a tensile fracture cross section.
