A method for cooking, particularly for snacks such as potato chips and the like. The particularity of the method resides in that it comprises the following operations:
- preheating a granular medium, for example food-grade salt, bringing it to a temperature between 180°C and 210°C, and accumulating it so as to form a bath in which the raw snack is to be immersed;
- immersing the raw snack in the salt bath;
- keeping the snack in the salt bath for such a time as to allow its complete expansion;
- separating the snack from the salt. Cooking can be completed by a subsequent toasting operation, adapted to further reduce the moisture of the snack, improving its appearance and fragrance. |
