PROBLEM TO BE SOLVED: To provide a method for producing a fried cake, by which the shape of the fried cake can freely be changed, even when a highly viscous dough difficult to mold the dough is used. SOLUTION: This method for producing the fried cake is characterized by having the first molding process for molding a dough in a prescribed shape, a frying process for frying the molded dough, a heating process for heating the fried cake material obtained by the frying, and the second molding process for molding the thermally softened dried cake material in a prescribed shape, and preferably further a cooling process for cooling the fried cake material obtained by the frying, between the frying process and the heating process.
