METHOD FOR PREPARATION OF TRANSGLUTAMINASE-CONTAINING MATTER HAVING REDUCED PROTEASE ACTIVITY

A treatment method for reducing a protease contaminating in a transglutaminase-containing matter without decreasing the transglutaminase activity of the matter; a method for preparation of a transglutaminase-containing matter having a reduced protease activity, the method comprising the step of treating a transglutaminase-containing matter contaminated with a protease while retaining the matter at a temperature not lower than 0°C and lower than 50°C, at a pH higher than 9.0 and lower than 13.0 for a period ranging from 10 minutes to 60 hours inclusive; a transglutaminase-containing matter produced by the treatment method; a transglutaminase preparation having the transglutaminase-containing matter blended therein; and a method for production of a food having the transglutaminase preparation added thereto.
