PROBLEM TO BE SOLVED: To provide a method for efficiently producing a high quality hydrolysate by making an organic substance and water as a good mixed state for the reaction. SOLUTION: This method for producing the hydrolysate by performing the hydrolysis of an organic substance by mixing with water is provided by performing the mixing of the organic substance with water at≥5.5 (1/sec) shearing speed, U/D<SB>min</SB>[wherein, D<SB>min</SB>is a minimum inner diameter (mm) of a flowing passage of the mixing part; and U is a flowing speed (mm/sec) of the mixture of the organic substance and water], and also performing the hydrolysis reaction at 150-350°C temperature and under the reaction pressure of at or higher than the saturated vapor pressure of water.
