Preparing an herbal extract of fruits with seeds enriched with herbal substances of interest comprises separating and preparing fractions of peel, pulp and seeds/seed kernels/seed hulls, individually. Independent claims are included for: (1) a pulps enriched fraction comprising pulp at 60 wt.%, preferably 80 wt.%; (2) a fraction enriched in peels comprising peels at 50 wt.%, preferably 70 wt.%; (3) a fraction enriched in seeds comprising seeds at 50 wt.%, preferably at 90 wt.%; (4) a fraction enriched in seed hulls comprising hulls at 70 wt.%, preferably 90 wt.%; a fraction enriched in seed kernels comprising kernels at 80 wt.%, preferably 90 wt.%; (5) an extract obtained starting from the pulp fraction comprising polyphenol at 10 wt.%, preferably 40 wt.%; (6) a food, nutraceutical, cosmetic and dietetic composition comprising the extract; and (7) a substrate composition for obtaining natural and water-soluble yellow dyes comprising the extract.
