<P>PROBLEM TO BE SOLVED: To provide a method for producing whole fat soybeans which eliminates green smell peculiar to soybean without spoiling active ingredient held in soybean, such as water-soluble protein. <P>SOLUTION: This method for producing the whole fat soybeans comprises (a) a process of removing impurities from raw material soybeans to obtain sorted soybeans, (b) a dehulling process of separating embryos and hull from the sorted soybeans to obtain sterile dehulled soybeans, (c) a process of semi-deactivation steaming process of steaming the sterile dehulled soybeans under the condition of a temperature of 70-120°C for 60-300 s with hot water or steam to deodorize and deactivate trypsin inhibitor, (d) a drying process of drying the semi-deactivated sterile dehulled soybeans to prescribed water content, (e) a crushing process of crushing the dried sterile dehulled soybeans and (f) a categorizing process of categorizing the crushed sterile dehulled soybeans only to soybean powder of less than a prescribed grain size. <P>COPYRIGHT: (C)2007,JPO&INPIT |
