A fried or roasted snack food comprises a core and a coating. The core comprises a fruit or vegetable base and an edible plasticizer and has a water activity before frying or roasting of 0.2-0.55. The coating comprises starch and flavoring material(s). An independent claim is also included for a method of preparing a snack food by frying or roasting the coated core.
