<P>PROBLEM TO BE SOLVED: To provide a soup stock extraction apparatus that can prevent the soup stock solution from becoming cloudy, when the soup stock is extracted from the raw material, and can inhibit the formation of pasty film on the bottom of the storage tank for the raw material. <P>SOLUTION: The stirring part 53 in the extracting equipment 5 comprises the main body 53a that is rotatably attached to the bottom 51a of the vessel 51, the intermediate joint part 53b attached to the main body 51 and extends toward the radial direction, as keeping a prescribed distance from the bottom 51a of the vessel 51, and a wood plate 53c is set on the top end of the connecting part 53b so that the plate may stand up on the bottom of the vessel 51.
