1,3-SPECIFIC LIPASE POWDER, METHOD OF PRODUCING THE SAME AND UTILIZATION OF THE SAME

A 1,3-specific lipase originating in Rhizomucor miehei which is in the form of a lipase powder having a spherical shape and a moisture content of 10% by mass or lower; a lipase composition in which this lipase powder is dipped in fat or infiltrated thereby; and a method of producing a lipase powder which comprises spray drying a lipase- containing aqueous solution having a pH value adjusted to 6 to 7.5.
