The invention concerns the use of a fungal extract comprising for the major part at least one non-ionic polysaccharide as technological additive for treating a food-grade liquid. The invention aims mainly at providing a treatment method with a single technological additive to perform the treatment of different beverages and to supply a single technological additive to perform steps of treatment of a beverage. The invention is particularly adapted to the treatment of fermented beverages such as wines, beer and the like.
