A method of processing a batch of honey is disclosed. The honey to be processed is stored in drums and the honey in a number of drums is combined to form a batch to be processed. Before being included in a batch, the honey in each drum is tested to ensure that it has the requisite colour blend, flavour, moisture and glucose content before it is added to the batch. A batch is then formed from a number of the drums which are chosen to ensure that their average glucose/water ratio is in the region of 1.65 û 1.85. the batch of honey is then pasteurising and it is then filtered using a filter aid. <Figure 1> |
