PROBLEM TO BE SOLVED: To provide a mixer for noodle dough, capable of optimally kneading the noodle dough having a wide range of water contents, from a low water content to a high water content, by only one of the mixer in a kneading operation process of the noodle dough for noodles, etc. SOLUTION: In this mixer for the noodle dough, right and left rotating shafts are each freely rotatably supported on right and left side walls of a stirring tank of which the bottom part is formed into a semicylindlical shape, so that axes of the right and left rotating shafts consist with each other and end parts of the rotating shafts are each projected into the stirring tank a little, right and left arms which are extended in both directions perpendicular to the rotating shafts are each positioned on the end parts of the right and left rotating shaft in the stirring tank, so as to face each other, stirring rod-detaching and attaching parts are each mounted on top end parts of the right and left arms in both the directions, and stirring rods are freely rotatably supported on the detaching and attaching parts between the right and left arms facing each other. Further, a screw-type stirring rod A, a flat plate protrusion-type stirring rod B, a cruciform stirring rod C, and a round bar-type stirring rod D are attached to the detaching and attaching parts of the right and left arms in both the directions, by being optionally combined with one another.
