Provided is a method for producing a chicken boiled with scorched rice which produce a scorched rice without stop of heating, and in which side materials as well as chicken or duck as raw materials are sufficiently boiled, and the produced boiled chicken with scorched rice can be conveniently irrespective of age or health condition. The method comprises the steps of (i) adding 1-5 g of salt and 1-5 g of black pepper to 1.1-1.3 kg of chicken or duck(from which hair and viscera are removed), and then storing the chicken or duck as raw material at 0-3 deg.C for 18-30 hours, (ii) adding 30-80 g of mushroom or king oyster mushroom, 5-10 g of ginseng, 2-5 g of pine nuts, 5-8 g of jujube, 15-20 of garlic, 10-15 g of dried chestnut, 200-300 g of soaked rice, 550-650 g of soaked glutinous rice to pressure cooker containing the raw material, (iii) pouring 1.6-1.9 liters of water or broth of 60-80 deg.C to the pressure cooker, (iv) heating the pressure cooker at calories of 19,000-22,000 kcal/s for 18-22 minutes, (v) further heating the pressure cooker at calories of 2,500-3,500 kcal/s lower than those of the step(iv) for 8-12 minutes, (vi) introducing the coarse materials obtained from the step(v) into earthen bowl and heating the bowl at calories of 1,500-2,000 kcal/s for 5-10 minutes again. |
