<p>In a method for winding filled dough pieces (3) by laying the piece flat on a mechanically driven (or drivable) transporting substrate (1), with the filling (6) on its upper surface, and passing the piece on the substrate through a winding passage in which it is rolled to enclose the filling, the filling is in solid and/or specific form and is pressed directly onto and/or into the upper surface of the piece before the winding passage, using a press (9). An independent claim is included for apparatus for the process, consisting of a transporting substrate (1) (preferably a conveyor belt or table) for transporting the dough piece to the winding passage, with a pressing passage (7) located before the winding passage in the conveying direction (9) and formed by the substrate and an opposing press (9), which presses the filling directly onto or into the upper face of the dough piece on the substrate and has a spacing (20) from the substrate corresponding to the dimensions of the filling and the thickness of the dough piece.</p> |
