FIELD: confectionery industry, in particular, process for preparing of caramel mass. ^ SUBSTANCE: method involves solving RAFTILOSER P95 in water in an amount of 5-15% by weight of sugar as to dry substance in the ratio of 1:5 at temperature of 20 C; adding sugar and boiling out syrup until dry substance weight part is 75%; at the end of boiling-out procedure, introducing syrup heated to temperature of 45 C and continuing the process of boiling-out resultant syrup until weight part of dry substances reaches 95% and of reducing substances - 15-16%. Caramel mass prepared by said method has improved plasticity and reduced hygroscopicity due to decreased amount of reducing substances. Method allows prophylactic properties to be imparted to product, and also energy value to be reduced by 3-5%. ^ EFFECT: decreased processing temperature and improved quality of caramel mass. ^ 3 tbl, 3 ex |
