In tenderizing poultry, the killed bird is held for 1/2 -6 hr. at 95-125 DEG F., under high relative humidity, before it is plucked. The conditions are preferably such as to maintain the skin suitable for mechanical plucking, preferred conditions are 100-110 DEG F. and at least 75 per cent R.H. for a period of 2 hours. Before the treatment the bird may be dipped into water to which a surface-active agent has been added; the pH is preferably 7.5 - 8.5. The R.H. may be 100 per cent, the bird being kept immersed in water. |
