<p><P>PROBLEM TO BE SOLVED: To provide a device for producing processed food material, in which vegetables, meat and/or fish and shellfish are used as food material, particularly that used for processed food, and properly kept with appropriate amount of salt and/or sugar/moisture/moisture activity, applicable to chilled storage and normal-temperature storage, having excellent taste/color/flavor/texture, and causing no deterioration in quality. <P>SOLUTION: The device for producing processed food material comprising vegetables, meat and/or fish and shellfish is provided with a mesh tray on the bottom part of which vegetable raw material, meat raw material and/or fish and shellfish raw material are placed, and a vacuum dewatering container having a nozzle at the inside of which oil and fat for cooked food is subjected to showering. <P>COPYRIGHT: (C)2007,JPO&INPIT</p> |
