PROBLEM TO BE SOLVED: To provide a method, device, and program for evaluating the risk of taking dental caries, which can keep an intraoral environment in the best state by making a subject himself/herself accurately understand the risk of taking the dental caries and making the subject adequately communicate with a dentist. SOLUTION: This device comprises an input means for inputting measured values of chemical physical properties of a specimen which is collected from the intraoral part of the subject, information about the subject, and the like, a Stefan curve preparing means for determining a Stefan curve specific to the subject based on the measured values of chemical physical properties, information about the subject, and information about meal trend of the subject, and a means for determining a line serving as a boundary between the deliming action and re-calcification action in the prepared Stefan curve. Since the relation between the deliming action and recalcification action of the subject is shown as an area ratio in one glance, the subject can further certainly recognize the state of the intraoral situation of himself/herself.
