A method of containing peas is provided comprising the steps of providing a container ( 1 ) mounted on a vehicle ( 11 ) and containing a pea load, maintaining the concentration of oxygen at or above 15% by volume throughout the container ( 1 ) and maintaining the concentration of carbon dioxide at or below 1% by volume throughout the container ( 1 ). Also provided are a container ( 1 ) for use in the method and a method of processing peas employing such a container.
