NEW TRYPSIN DERIVED FROM STARFISH AND ITS USE

PROBLEM TO BE SOLVED: To obtain a new trypsin that has higher reliability than that derived from a mammal and contributes to the effective use of resources and to provide its representative use technology.

SOLUTION: The polypeptide has trypsin activity, does not require Ca2+and an optimal temperature in the vicinity of 50°C. The polypeptide is found in pyloric caecum of Asteria pectinifera and comprises 264 residue amino acids. The mature type trypsin comprises 237 residue amino acids.
