Process for manufacturing a cheese product comprising the steps of preparing a liquid cheese mix comprising the steps of: (a) preparing a liquid cheese mix comprising a dairy component, lactose and lactobionic acid or a dietarily acceptable salt or neutralised form: and (b) coagulating the cheese mix to obtain the cheese product. Also described is a process for manufacturing a process cheese product containing lactobionic acid comprising the steps of: (a) preparing a cheese mix comprising lactose, comminuted solid cheese, and lactobionic acid or dietarily acceptable salt or neutralised form; (b) heating the cheese mix at a temperature and for a time to yield a melted cheese blend; (c) heating the melted cheese blend at a temperature between about 170oF and about 200oF for between about one and ten minutes to provide the process cheese product; and (d) packaging the process cheese product.
