PROBLEM TO BE SOLVED: To provide a vacuum packaging machine which can maintain a sanitary condition under an excellent operating environment by making washing and cleaning possible while vacuum packaging operation is performed. SOLUTION: In the vacuum packaging machine, a surface plate 1 for an operator to lay a packaged object at front side and a surface plate 2 to form a vacuum room at back side are arranged along a horizontal guide 3 and a chamber box 5 is formed movably up and down to the back side surface plate 2 and the vacuum chamber is formed by lowering the chamber box 5 to make in contact closely to the surface plate 2 and four places, places nearly close to the axis 6 and places close to both ends which are provided at the lower part of the horizontal guide 3, defining a nearly center part of the horizontal guide 3 as a common axis 6, are defined as transition joint parts 7, 8 and 7a, 8a and a surface plate guide mechanism 11, in which semicircle guides 9, 10 having a small and a large diameter and forming a double circle are provided, is formed.
