<P>PROBLEM TO BE SOLVED: To provide low-pH food reduced in acidic taste/acidic smell without affecting its flavor: and to provide a method for producing the low-pH food. <P>SOLUTION: The method for producing low-pH food reduced in acidic taste/acidic smell comprises adding organic acid, highly sweet sweetener or tasty seasoning to food raw material, and/or soaking food in water solution comprising each of the organic acid, the highly sweet sweetener or the tasty seasoning, or in mixed water solution so as to make the food contain the organic acid, the highly sweet sweetener and the tasty seasoning. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
