A method of enhancing the yield of a,ß-unsaturated carboxylic acid obtained by liquid-phase oxidation of an olefin or a,ß-unsaturated aldehyde. In particular, there is provided a process for producing an a,ß-unsaturated carboxylic acid, characterized by including the step of carrying out an oxidation of olefin or a,ß-unsaturated aldehyde in a liquid phase to thereby obtain a reaction mixture containing an a,ß-unsaturated carboxylic acid and a,ß-unsaturated carboxylic anhydride and the step of bringing the a,ß-unsaturated carboxylic anhydride into contact with an alcohol or water to thereby obtain an a,ß-unsaturated carboxylic acid resulting from decomposition of the a,ß-unsaturated carboxylic anhydride.
