<P>PROBLEM TO BE SOLVED: To provide a method and apparatus for producing soybean curd intended for solving quality deterioration and sanitary problems caused by washing badness through continuously performing coagulation processes of mixed soymilk in a condition of wrapping with a cylindrical film and preventing the break of soybean curd in the cylindrical film, and at the same time capable of freely producing the soybean curd with a preferable shape. <P>SOLUTION: The method and apparatus for producing the soybean curd comprises continuously filling in the cylindrical film mixed soymilk obtained by adding a coagulating agent to soymilk followed by mixing, and coagulating the mixed soymilk to form the soybean curd while transporting the cylindrical film in a heating device. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
