PROBLEM TO BE SOLVED: To provide a device for removing scum and the fat content, by returning only a pure soup to a pan by waiting for floating the scum and the fat content on a surface, by putting the soup scooped up from the pan in a vessel 1. SOLUTION: Its part spills out in the pan by passing through an opening part 2, simultaneously when a surface A-B line of the soup indicated in the figure moves to a C-D line, by inclining the vessel 1 containing the soup scooped up from the pan on the pan. When adjusting a spilling-out quantity by forming the vessel 1 into a structure capable of grasping a state of the scum and the fat content made of a transparent raw material, only the pure soup can be returned in the pan by leaving the scum and the fat content.
