PURPOSE: Ramyeon(ramen) containing barley, unpolished rice, beans, corn and potatoes as a main ingredient is provided. The product has improved eating quality, consistency, texture and color of noodle strips. CONSTITUTION: The cereal ramyeon contains 2 to 30% by weight of cereal flour, 20 to 53% by weight of potato starch, 18 to 47% by weight of modified starch, 10 to 17% by weight of gluten and 1 to 5% by weight of additives selected from guar gum, binding agents, pyrophosphoric acid, purified salt, riboflavin and polyphosphoric acid. For an example, 5 to 30% by weight of unpolished rice flour is mixed with 20 to 40% by weight of potato starch, 35 to 47% by weight of modified starch and 8 to 17% by weight of gluten. |
