PROBLEM TO BE SOLVED: To provide a method for preserving the protein-containing liquid extracted from food (including processed food), especially food subjected to heat treatment and/or pressure treatment, without losing the antigen-antibody reactivity of protein, and a diluting solution used therein. SOLUTION: The protein-containing liquid, which is extracted from food using a liquid containing an ionic surfactant and a reducing agent, is diluted using the diluting solution containing at least one component selected from among a nonionic surfactant, an amphoteric surfactant and a non-surfactant type sulfobetaine before preserved.
