The electrodes (6, 12, 13, 14) are placed at the top level of polygon and non-flat polygon and along the trajectories defining concentric circles. The central electrode is placed at the center of the polyhedron. The electrodes form full peripheral and central crowns along an axis extending axially to the center of the sensor and also form needles which measure 1 mm diameter and 1 mm length. An independent claim is also included for process of measurement of the maturation state of meat/fish.
