<P>PROBLEM TO BE SOLVED: To provide a powder containing a β-maltose hydrate crystal, powdered by spraying, excellent in solubility in an aqueous medium and easily handled, to provide a method for producing the same, and to provide applications of the same. <P>SOLUTION: The powder containing β-maltose hydrate crystal obtained by treating a maltose-containing solution to obtain a massecuite, powdering the resultant by spraying, then keeping the obtained in a comparatively low-humidity and high-temperature atmosphere, and thereafter, keeping in a comparatively high-humidity and low temperature atmosphere, making α-anomer in the maltose ≥7 but <14 as the maltose isomer. The obtained β-maltose hydrate crystal contains ≥86 but <93 maltose and ≥2 glucose in terms of anhydride, and has ≥62% but <72% crystallinity, is excellent in dissolubility in the aqueous medium, has good fluidity, is an easily handlable powder, and dissolves problems by establishing its uses for various compositions such as food and drink, cosmetics and medicines. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
