<P>PROBLEM TO BE SOLVED: To develop a chicken MANJU which has been impossible/difficult. <P>SOLUTION: This method for cooking the chicken MANJU comprises a cooking process for mixing cooking chicken with sake, seasoning, green onion, and minced ginger, steaming the mixture, and then cooling the steamed mixture, a cooking process for taking only the sake from the steamed chicken, adding water and starch to the sake, heating the mixture in a paste-like state, and then cooling the product, a cooking process for cooking the steamed chicken and then mixing the cooked chicken with the obtained sake paste and black pepper, thus preparing the filling, a cooking process for mixing yeast, hot water and sugar, mixing the foamed mixture with milk, lard, Krematop (trade name), sugar, and violet/eagle to prepare fermented noodles, thus preparing the skin, a cooking process for mixing and kneading the fermented noodles with whipped cream, milk, baking powder, brine water, and vinegar to prepare the MANJU, and a cooking process for extending the skin prepared from the fermented noodles, wrapping the filling with the extended skin, and then steaming the product on a paper mat. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
