FIELD: food processing industry, in particular antioxidants for oil-and-fat products. ^ SUBSTANCE: claimed antioxidant represents oil extract from tutsan obtained by extraction of shredded tutsan grass with vegetable oil in ratio of 1:1 and conditioning at 18-20°C. Obtained antioxidant is used in amount of 0.5-5.0 % based on oil mass.
