<P>PROBLEM TO BE SOLVED: To provide a method for producing a fine powdery seasoning in a shortened processing time at a low cost from a food animal meat extract rich in amino acids as effective taste components. <P>SOLUTION: The fine powdery seasoning is produced by (1) a step to boil food animal meat as a raw material and separate into a solid component and stock, (2) a step to further boil the stock and remove scum to obtain a food animal meat extract (Brix≥70), (3) a step to dilute the stock with water (Brix 5-60), (4) a step to mix and adsorb the extract to an edible water-insoluble chip carrier such as bran and cellulose to obtain a carrier supporting the food animal meat extract, (5) a step to sterilize the extract carrier by heating, (6) a step to scatter 0.05-0.10 pt.wt. of koji malt to 100 pts.wt. of the sterilized extract carrier and culture at 30-45°C for 2-7 days, (7) a step to dry the cultured product at 50-90°C for 6-7 hr and (8) a step to crush the dried product to powder. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
