<P>PROBLEM TO BE SOLVED: To provide peptides and an amino acid-containing starch having a taste with priority given to preference and further good digestion and absorption by using bean-curd refuse of soybeans or defatted soybeans as a raw material. <P>SOLUTION: The bean-curd refuse of the soybeans or defatted soybeans are mixed with starch. An aqueous suspension is prepared therefrom and fermented to convert proteins into the peptides and amino acids which are incorporated into a starch sugar chain made to coexist. Thereby, the peptides and amino acids are recovered together with the starch to carry out purification.
