Cracklings made of poultry meat are a product prepared from a special technological procedure being the subject of protection; therefore, the product has a wide application with all sorts of population, from children to mature people, diabetics, as well as with all other suffering from cholesterol and obesity, as hereby a low-calorie product is described. The invention herewith belongs to the field of technology of poultry processing. Thermal process carried out in palm oil exposed to a high temperature even up to 180°C without remarkable quality alteration. By squeezing of excess of free water, process of thermal processing is reduced thus the product maintains the properties of a high quality product. |
