PROBLEM TO BE SOLVED: To provide a method for thawing frozen fish and shellfish preferably usable for frozen fish with red flesh containing myoglobin as a muscle pigment. SOLUTION: The method for thawing frozen fish and shellfish comprises the following process: a first thawing process of thawing the surface of the frozen fish and shellfish through soaking the frozen fish and shellfish or its cut pieces in a solution tank and producing vibration with a prescribed frequency in the solution tank; and a second thawing process comprising taking out the frozen fish and shellfish, storing them in a closed vessel, putting the closed vessel in a second solution tank, and producing vibration with a prescribed frequency in the solution tank to thaw the fish and shellfish.
