<P>PROBLEM TO BE SOLVED: To provide a mix for deep-fried food having crispy and soft palate feeling after deep-frying, light breading and smooth palate feeling, and sustaining just-fried food feeling even if re-heated with a microwave oven and eaten in the case that a long time goes by or food is frozen. <P>SOLUTION: The mix for the deep-fried food contains a crosslinking starch having as the raw material small particle starch represented by rice starch and a degree of swelling of 0.5-5.0 ml.
