<p>Cutting is carried out in a mould which securely holds 60-100% of the meat surface, and by means of a frame or parallel knives as they ride through slots provided in the mould. The knives should be in two or more planes in their frame which is vibrated together with the knives as these are pressed onto the meat when cutting starts. Part of the cut should only penetrate, other cuts completing the separating process at the same time as this. While the meat is being cut by knives in the planes specified, it can be cut simultaneously in one or more different planes. Pressure plungers can be used to clamp the meat in the mould.</p> |
