SOLUBLE POLYPEPTIDE DERIVED FROM PEA WHEY, FOAMING AGENT AND PROCESS FOR PRODUCING THE SAME

<p>A process for producing a soluble polypeptide derived from pea whey, comprising the first step of treating pea whey by means of a crossflow filter membrane of 3000 to 4000 fraction molecular weight to thereby obtain a concentrate and a permeated liquid and the second step of drying the concentrate to thereby obtain a powdery polypeptide. There is provided a novel polypeptide that exhibits foaming characteristics such that an initial foaming potency is high but a foam stability is low so as to cause relatively prompt disappearance of foams. Further, there are provided a relevant foaming agent and process for producing a polypeptide.</p>
