FIELD: food-processing industry, in particular, canned food industry, more particular, preparing of semi-finished garnish potatoes. ^ SUBSTANCE: method involves washing and inspecting potatoes; treating potatoes with preparation produced by sequential extracting of Saprolegnia parasitica micromycet biomass by predetermined process; holding; cleaning potatoes; subjecting to additional cleaning; cutting and blanching cut potatoes to semi-ready state; providing vacuum packaging of blanched potatoes; pressurizing and pasteurizing potato packages. ^ EFFECT: improved organoleptical properties of base product. |
