摘要 PROBLEM TO BE SOLVED: To provide a foam-containing food, such as bread, containing soybean flour in a large amount, and to provide a method for producing the same. SOLUTION: Dough for the foam-containing food is formed by together mixing middle seed dough and soybean dough, wherein the middle seed dough comprises soft base dough which is prepared by adding 100-140 pts.wt. of water, and an yeast or a foaming agent, and, if necessary, a water-soluble food fiber to 100 pts.wt. of wheat flour, then mixing them, and accelerating formation of a network structure of gluten, so as to make the soft base dough have enough viscoelasticity and contractibility, the soybean dough is prepared by adding, if necessary, water and a part or the whole of an auxiliary raw material comprising a flavor improving material or a quality improving material to the soybean flour used as a main raw material, then mixing and kneading them, and uniformly dispersing/mixing the mixed raw materials, so that the soybean dough has a viscosity of 1×10<SP>3</SP>to 2×10<SP>5</SP>(Pa×s) at a shear rate of 0.01 (/s), and the dough contains the soybean flour in an amount of≥50 pts.wt. and the wheat flour in an amount of≤50 pts.wt.
