A process for producing a symmetrical triglyceride, characterized by subjecting a medium-chain fatty acid triglyceride and a long-chain fatty acid triglyceride to random transesterification, as a first reaction, with the aid of an enzyme or chemical catalyst to obtain reaction products comprising triglycerides having the medium-chain fatty acid and the long-chain fatty acid as the constituent fatty acids, subjecting the reaction products and an alcohol monoester of a medium-chain fatty acid to transesterification, as a second reaction, with the aid of an enzyme having specificity for sn-1,3 positions, subsequently removing the medium- chain fatty acid alcohol monoester and the long-chain fatty acid alcohol monoester from the reaction products yielded by the second reaction to obtain the target symmetrical triglyceride having the medium-chain fatty acid in each of the sn-1,3 positions and the long-chain fatty acid in the sn-2 position. By the process, a high-purity symmetrical triglyceride having a medium-chain fatty acid in each of the sn-1,3 positions and a long-chain fatty acid in the sn-2 position can be industrially efficiently produced. |
