PURPOSE:To obtain the titled composition emulsifiable and dispersible easily in water, having excellent taste and flavor, preservable stably for a long period, and suitable as an additive for noodles, etc., by mixing an oil layer containing a food oil or fat, ethanol-fractionated lecthin and ethanol and a water layer containing a sugar alcohol, etc. at a specific ratio. CONSTITUTION:(A) 10-70pts. of an oil layer composed of preferably 43- 76(wt)% food oil or fat, preferably 10-43% ethanol-fractionated lecithin and preferably 7-20% ethanol is mixed with (B) 90-30pts. of water layer composed of water and >=70% sugar alcohol and/or sugar. The mixing of the oil layer and the water layer can be carried out without using an emulsifying apparatus, and a homogeneous oil and fat composition can be produced easily with simple agitation of the mixture. |
