<p>Disclosed is a process of producing an essentially stable aqueous suspension of protein wherein the aqueous suspension of protein is directly acidified, comprising the steps of: obtaining a protein material, dispersing the protein material in an aqueous protein dispersion to form an initial homogenized aqueous protein dispersion, adding an effective amount of stabilizer to the initial homogenized aqueous protein dispersion, acidifying the initial homogenized aqueous protein dispersion and homogenizing the initial homogenized aqueous protein dispersion to form an essentially stable aqueous suspension of protein.</p> |
