<P>PROBLEM TO BE SOLVED: To provide a method for making a solution smooth without manifesting viscosity when dissolving glucomannan and/or galactomannan in water, and heating the smooth solution at a dissolving temperature (80°C) or above followed by cooling and thickening/gelatinizing the solution without greatly changing physical properties to a desired sol-like or gel-like food. <P>SOLUTION: This method for dissolving glucomannan and/or galactomannan comprises dissolving in a condition of coexisting the glucomannan and/or galactomannan and a highly branched cyclic dextrin exist. A preparation method comprises adding and mixing the glucomannan and/or galactomannan to/with a solution containing the highly branched cyclic dextrin, or mixing the glucomannan and/or galactomannan and the highly branched cyclic dextrin at the same time with an aqueous solution. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
