PROBLEM TO BE SOLVED: To automatically tie rod-like bread dough and to form tied bread dough. SOLUTION: A method for tying and forming the bread dough comprises a preparatory step of the rod-like bread dough and a tying step of the rod-like bread dough. The tying step has an engaging step of engaging the nearly central part of the rod-like bread dough, a step of holding one end side of the rod-like bread dough, a step of gripping the other end side of the rod-like bread dough in the state, turning the other end side of the rod-like bread dough at the engaging point as a fulcrum, crossing the other end side of the rod-like bread dough with the one end side of the rod-like bread dough and forming a ring-shaped part, a step of lifting the one end side of the rod-like bread dough and placing the one end side on the ring-shaped part, a step of pushing the one end side of the rod-like bread dough placed on the ring-shaped part into the ring-shaped part and a step of passing the one end side of the rod-like bread dough through the ring-shaped part.
