<P>PROBLEM TO BE SOLVED: To provide a solidified food material production apparatus which comprises automatically preparing, solidifying and molding a food material such as a food material for cream croquettes comprising a roux and ingredients in simplified processes without producing the food material by a batch type production method and can thereby massively produce the food material in good production process efficiency. <P>SOLUTION: This solidified food material production apparatus is characterized by comprising a charging zone A for charging the food material comprising a roux and ingredients in a plurality of molds 3 attached to a moving endless chain conveyer 1 in an ordinary temperature zone, a cooling zone B for cooling and solidifying the above-mentioned mixed food material charged in the molds 3 in a lower temperature zone than the ordinary temperature, a process 8 for taking out the mixed food material from the molds 3, and a zone C for washing, sterilizing and drying the molds from which the food material is taken out, in this order. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
