PURPOSE: Provided are korean traditional soybean paste containing sea tangle, which contains an amount of increased minerals and has increased bioactivity. Also, provided are a preparation method and ethanol extract thereof. CONSTITUTION: Korean traditional soybean paste is characteristically manufactured by mixing 2-10 wt.% of sea tangle, 50 wt.% of fermented soybean cake, 25-33 wt.% of boiled barley and 15 wt.% of salt, based on the weight of the soy paste; and aging the mixture for 3-6 months. |
